Well it's Easter and I can't believe I haven't made anything decadent and super chocolaty this year. After all Easter is a very good excuse to munch on chocolate treats and not feel guilty because we're meant to munch on chocolate. Aren't we? Nope not this year, just delicious nutty/seedy, high energy, healthy birdseed bars!!! The truth is I've been trying to be healthy and lose a few extra Mumma pounds and I didn't want Easter to sabotage the progress of 4 weeks. This has taken a whole lot of will power let me tell ya.
So I got into the groove of toasting some oats, almonds, walnuts, pumpkin seeds sunflower seeds and flax seeds in a pan on the stove top. Then on low I stirred and dissolved a jar of brown rice syrup with a big glob of almond butter with 1 tablespoon of vanilla until it bubbled and caramelized which took about 10 minutes. It was then time to poor the wet mix over the dry mix and add 1 cup of dry blueberries and 1 cup of dry cranberries.
After blending both mixtures well I transferred the whole mass to a nonstick cookie tray with sides. I left it to cool (it cools very fast since the rice syrup makes it very sticky) and then cut it up into pretty squares.
And there you have a very tasty and healthy snack. Kinda like granola bars but you know all of the ingredients are wholesome.

Firsts.....
This is my first post - hooray! I can hear one person in particular (you know who you are!) saying 'FINALLY'. I've been inspired to blog about all the things I love and love making/taking/baking (there's a lot) for a long time now, in fact nearly 3 years. My dream to blog (and addiction to blogs) was inspired by my dear friend (and one of my favourite bloggers) Mamajuliemadeit. Then when I finally got around to starting the design everything was put on hold with becoming pregnant and feeling sick for what felt like a long time. Then it was time to pack up & move to our new home and after that we were busy unpacking & fixing up our new digs. All whilst preparing and nesting for the arrival of our now 11 month old beautiful baby girl.
The word 'first' has meant A LOT to us over the past year. We have experienced 'firsts' galore from first time home owners, to first baby and all the firsts that come along with this magical (and challenging) year. Actually if I was to list them all it would be super long and never ending.
Today we attended Stella's first 1st birthday party for her friend who was born 2 weeks before her. For this occasion I thought I'd put my creative crafting hat on and finally start my long list of projects. I printed dinosaurs on two onsies for part of the gift. I got the idea from Made - another blog fave.
I think they turned out pretty good for my first go at this printing method - I'll definitely do it again. It was a fun project and now I've got that first out of the way I'm amped to cross a few more things off my list.
